One more great recipe (from the WLS AM Radio Website!)

Don Wade’s (from WLS AM Radio Chicago!) Super Easy Pepperoncini Roast Beef!

This is wonderful !

1 beef roast
1 jar of Pepperconcini Peppers (with liquid)
1 1/2 to 2 cups of water.

Put all in crock pot and cook on high for 6 to 8 hours. Can serve just like that or is extra wonderful on bakery bread with Colby cheese melted on top! A little bit of a “kick” but not too much!

Just tried this new recipe, so simple but very good!

Homemade Baked Chicken Strips with Panko Crumbs!
Yummy and Crunchy!
(serve with ranch dip!)

1 cup Panko Bread Crumbs (Must use these!)
2 eggs beaten
1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. paprika
1/2 cup to 1 cup flour
about 1 – 1/2 lbs chicken breasts or chicken tenders (thawed)

Place Panko and spices in a bowl. In another bow, beat the egg. Spray baking sheet with Pam or oil it. This makes clean up easier.

If using chicken breasts, cut them diagonally into about 3-4 slices. Dry the chicken with paper towels. Dip each chicken strip into flour and then shake to get rid of excess. Then dip into eggs, and then into the seasoned Panko crumbs. Press crumbs into the chicken. Lay each strip onto the greased baking sheet. Before placing in the oven, spary chicken lightly with Pam, or drizzle with about 1 T. melted butter. Bake in a 425 degree preheated oven for about 15-20 minutes. And there you have some really crunchy and delicious chicken strips! Or, you can cut them into nugget size, if desired. Enjoy!

Don’t forget for summer…the great 7-Layered Salad!!!
(This can be layered in a glass bowl or for more even distribution use a 9 x 13 pan)

1 head chopped iceberg lettuce (1st layer)
½ cup chopped celery (2nd layer)
½ cup chopped green pepper (3rd layer)
½ cup chopped green onion (4th layer)
1 package frozen green peas, thawed (5th layer)
1 cup shredded cheddar cheese (6th layer)
8 slices crumbled bacon (7th layer)

Dressing:
¾ cup sour cream mixed with ¾ cup mayonnaise
1 Tablespoon sugar
Spread dressing on top and chill (This is how the original recipe is stated. I prefer to not put the dressing on top) I let people put their own on.

(or if you prefer you can make homemade ranch dressing or use bottled for your salad)

Summer …Summer Days!!!

Lovin’ these warm sunny days! Even the hot ones! Can’t seem to soak in enough sun after that long winter.

Enjoying the walks, the gardening, flowers, beach, sitting downtown, family visits, grandchildren. Much to be thankful for.

The Christmas holiday season passed by very quickly, as are all the other days! Getting ready to repaint our living room, kitchen, dining room and hallway. I have decided to go with a darker beige..maybe a taupe color. Maybe with one or two walls with an accent color. Found two color swatches I really like. Also changing out some trim around the windows in the living room. Next pricing out new wood flooring for kitchen, island area and dining room, hallway, since it all flows together. New counter tops and sink also!!

80th Birthday celebration – my muvee

We celebrated my mom’s 80th birthday on her birthday August 5, 2010. Below is a movie of photos of the celebration.

Disney 2010

We had a magical trip to Disney in July…yes July….yes it was HOT! But we enjoyed every minute.

We tried new dining places in Disney this year, totally loved Yak and Yeti in Animal Kingdom, so much so, we went back again to eat!! Food just awesome! Also tried a dining place in France in EPCOT..That was NOT good! But had a wonderful waiter who conversed with Stephanie in French.

My favorites in Disney have to be Splash Mountain (totally fun!), Soarin’ which I can now do with my eyes open (HA), The Lion King production (just like a broadway show…totally and completely awesome), Carousal of Progress (tried and true), The People Mover, Buzz LightYear ( a totally fun and competitive ride and YES my score totally wiped out Wayne’s and Stephanie, not that I’m trying to brag or anything!), Monster’s Inc. Comedy Review, just to name a few. We went on many of these 3 or 4 times…not counting the other rides we went on!

We again stayed at Pop Century, I think our 3rd time and totally love the resort. Always have nice rooms, and just love the pool (actually there are 3) and just how incredibility clean and friendly everyone is!

Oh and did I mention 2 visits to Giradelli’s in Downtown Disney…so totally wonderful are their sundaes! They are huge…and of course VERY low in calories. We also visited the Lego store in Downtown Disney…huge! Wayne and I have decided to start a new hobby together, a Lego building hobby. Bought 2 kits, one for Wayne’s bday and one for Christmas, we got a discount and we had Disney points left over to pay down part of it…a deal we couldn’t resist!! Wayne plans on building oak shelves to display our new hobby! Too fun!!
