Just made a recipe I haven’t made in awhile, so decided to post it here and then into my recipe blog. It’s so easy and so delicious!!
Incredible Chicken Pot Pie
2 – ready made pie crusts (Pillsbury is the best!)
2 cups cooked chicken shredded or cut up (I always use rotisserie chicken has the best flavor!)
I bag of frozen vegetables FOR SOUP (this gives the best flavor and has potatoes in it)
1/2 block of creme cheese (I use low fat or fat free) at room temp.
1 cup cheddar cheese
1 can cream of chicken soup (I use no fat)
1/4 cup chopped onion
about a teaspoon garlic powder
pepper to taste
In bowl mix can of cream of chicken soup and ROOM TEMP cream cheese, mix until most of the lumps are gone. Add the bag of vegetables, chicken and cheddar cheese, garlic, onion and pepper. Mix thoroughly to blend flavors.
In large pie plate (I use glass) unfold pastry, put one of them in the bottom of pie plate and work up sides to top. Dump the whole bowl of mixture into the crust. Lay other crust on top, and pinch together all around. Can cut a fancy design in top…that is always fun!
Bake at 350 for about an hour. Once top is golden brown (but not TOO brown) take out of oven,
Let it sit about 5 minute, it will be easier to cut.
I serve with a crispy green salad, and savory bread or muffins.
